I was standing at the pig races when I heard it.
Not from a friend. Not from social media.
From the announcer.
She casually mentioned there was a corn dog stand right next door. Said they hand dip everything. Said people wait for it at other fairs.
I remember thinking… okay, that sounds good.
But fair food always sounds good.
Then I walked over.
If you have ever been to the Strawberry Festival in Plant City, you already know what this is.
There is a line.
Not a normal line. The kind where you stand there for 20 minutes and convince yourself it is probably worth it.
That line is for one thing.
A corn dog.
Smitty’s.
And right now, somehow, they are at the Clay County Fair with almost no line.
I walked up.
Ordered.
A few seconds later, they hand you something that does not look like your average fair corn dog.

It is bigger than you expect.
Crispy on the outside. Soft inside. The kind of bite where you pause for a second because it is actually that good.
It is not greasy in a bad way. It is just right.
Smitty’s Has Been Doing This for Over 40 Years
Smitty’s is a family business out of Plant City.
They have been doing this for over 40 years.
Same recipe. Same process.
They are not trying to have a huge menu.
They do corn dogs. Lemonade. Drinks.
That is it.
And honestly, that is probably why it works.
When you only do one thing, you either do it really well or you do not last that long.
They lasted.

I talked to the owner while I was there.
Red shirt. Same uniform as everyone working.
Super normal. Not trying to sell anything. Just doing his job.
I told him I was writing about it.
He smiled like he has heard that before.
Because when something is actually good, people talk about it.
Right Now, There Is Almost No Line
At the Strawberry Festival, people wait.
At the Florida State Fair, people wait.
They expect the line.
They plan for it.
But here?
I walked right up.
No wait.
No crowd.
That is not going to last.
Right now, you can walk up and get one in minutes.
That window is closing.
The fair runs through April 12.
A lot of people are going to walk through those gates.
At some point, someone is going to say:
“Wait… Smitty’s is here?”
And that is when the line starts.
So if you are going, go find the pig races.
Look next door.
Get one.
Then come back and tell me I was wrong.
